toasted coconut caramel bars

Oh hey.
I haven't done a recipe post in a while since we've been traveling, and this is technically a cheater post since I made this recipe before we left Virginia. I started baking through everything in our pantry, and after finding a bag of coconut I knew I needed to make some knock-off Samoa type bars. I've made Pillsbury Carmelitas bars before (recipe below), and decided to make something like them using coconut. I can't take full credit for these- they're a recipe I made with a mix of the three below:

What you'll need to make it happen:
1 1/4 cup flour
1 1/3 cup brown sugar
2 cups shredded coconut (toasted)
6 tablespoons butter
1 1/2 teaspoons vanilla extract
1 large egg
1/2 teaspoon baking powder
1/2 teaspoon salt
8 oz caramel sundae sauce
1/2- 3/4 cup semi sweet chocolate chips
parchment paper

How to make it happen:
Step 1: Toast your coconut. This isn't rocket science- but if you don't pay attention, it will burn, and then you'll be super annoyed...so pay attention. Spread your coconut onto a baking sheet and begin toasting for 10 minutes at 300 degrees. Pull out, stir around, and toast for another 20 minutes. You'll see the edges will start getting dark quickly, so either scrape them off the pan early or stir them in to the middle. Set aside 1/2 cup of the coconut for later topping.
Step 2: Turn up your oven to 375. While you're waiting for it to heat up  mix your flour, baking powder, salt, and 1 1/2 cups of toasted coconut together and set aside. 
Step 3: Beat your butter and sugar together until well mixed and add your egg and vanilla. Once well mixed, and in your coconut/flour mixture. 
Step 4: Line a 9 x 13 pan with parchment paper (this will make the bars a breeze to pull out) and spread your mixture evenly in the pan. Bake for 12 minutes, or until golden brown, depending on how hot your oven runs. 
Step 5: Remove pan from oven, and while still hot drizzle 6 ounces of your caramel sauce over the baked base, and put back in the oven to cook for another 15 minutes. Your caramel should be crazy bubbling when you pull them out!
Step 6: Let the base & caramel cool for a few minutes before sprinkling your chocolate chips evenly, spreading as they start to soften. Let cool until chocolate hardens.
Step 7: Once your chocolate is cool, drizzle the remaining 2 ounces of your caramel sauce over the bars and sprinkle your remaining coconut so it adheres to the caramel. 
Step 8: Let your bars cool completely before pulling up on the sides of the parchment paper to remove. Either using a very sharp greased knife or pizza cutter, slice bars into squares. These babies are RICH, so cut into fairly small squares!

I recommend keeping the bars in the fridge, mainly because in the summer they'll just melt all over- but also because they're delicious cold!

on being selfish...and thank you

*disclaimer- i realize this is a lot of talking for a monday post. bear with me people.

So as you all know, Michael and I are moving back to the Midwest.
We've been travelling for the past 8 days, hitting every single New England state on our way. Up until yesterday, it just felt like a vacation. We've been seeing so many new places and enjoying so much time with friends we hadn't really slowed down to realize we were getting closer and closer to home. While driving through Ohio and Indiana it suddenly hit me that this wasn't vacation, this was reality.

The selfishness sunk in then. Not all of me was ready to be back.

You know that feeling when you leave your phone/computer/etc at home? The totally unplugged feeling? At first it's unnerving because you're so used to having contact with everyone at your fingertips, right? Well I don't know about you, but after a bit it's so freeing. You don't feel like you need to respond to every text, tweet or email immediately, and it's thoroughly enjoyable. 

That's how it felt in Virginia. It was just Michael and me, on our own, enjoying time together uninterrupted. It sounds selfish, because it is. I have to say that every moment down there was like relishing the feeling of being totally unplugged. We didn't have any commitments/events to attend, and we didn't feel bad if we just spent the night in instead of seeing anyone. While I am beyond thrilled to be back to seeing our families and friends, I'll miss living in our little bubble. Although Virginia wasn't the right place for us for keeps, it was the right place for us at the time, I know that now.

All of this being said, I will be [figuratively] holding my breath until we arrive back tonight. There are so many people I cannot wait to hug.

Thanks for putting up with the onslaught of Instagram pictures. I know, I got a little bit obsessed with the pictures of toll tickets (and that wasn't even all of them!). This blog will clearly go on, in fact tomorrow I'll have a recipe post I totally forgot to get up before we left! The next few weeks will be a whirlwind of camping, moving, and figuring out what the heck we're going to do with ourselves...and I absolutely cannot wait.

Friday's Fancies #28: Stars & Stripes

Thanks to all virtually traveling with me during the Instagram overload on our New England road trip! We've been having an amazing time and love being able to share it all!

This Friday's Fancies is special this week because I got to meet the lovely and talented {av} last night from {long distance loving}! You can tell someone is 100% true to themselves on their blog when you meet them and they are just as you'd expect. {av} happens to be just as sweet and intelligent as she seems, and Michael sat patiently while we ate delicious Italian food and blog-talked. Alright, so the main attraction: Friday's Fancies. This week was of course 4th of July themed, and so I cheated and made basically copied what I wore for the holiday. I decided to go the all out, tacky, red, white, & blue route, and stuck out like a sore thumb in Mystic, CT. I missed the subtle memo. Shoot.
